Chef, Room4Dessert and founder of K&G Aprons - photo essay by Nyimas Laula
Grace eats dessert every day, probably in quite a different way that most people do. She leads the kitchen team at Chef Will Goldfarb’s afamed Room4Desssert in Ubud. Nourished as a team lead, she orchestrates the creations of a team that has evolved together since day one, guided and empowered by a mentor that is renown as one of the world’s best pastry chefs.
“Cooking is a part of art. Plating is like a dance, your hand is moving to create a piece of art”, says Grace, now embarking on the opening of their Season 12, after months of work on a new approach to their culinary narrative and meaningful flavours.
She risks one step further, and in life as well. She has created an apron brand together with her partner Koming, the magic behind R4D’s cocktails, already catering to many of the main restaurants in the island.
What do I like about my job? I have the best mentor, I could easily spend my life listening to talks about food. A taco topping? Shrimp, simple but only for strong people.
Why am I a Chica Chida? Because I am.
